Kale and Quinoa Salad
This easy salad recipe is a great go-to for a hearty and fueling meal. While I love this exact recipe, the real star is the salad dressing which is so versatile and can be added to any salad you like!
To Make the Salad:
Wash and tear 1 bunch of kale into bite size pieces. Add a sprinkle of kosher salt and drizzle with 1 teaspoon olive oil. Massage the kale with your hands until it turns a darker green.
- Add 2 cups of pre-cooked quinoa, 3 pre-cut carrots, 1 julienned red bell pepper, and 1/4 cup of sunflower seeds to the massaged kale.
- Toss these ingredients and add half the dressing and combine.
- Thow the salad, as constructed thus far, in a small pan and warm over medium heat for a few minutes
- Remove from heat and return to salad bowl, then add 1/4 cup of pepitas, 4 sliced radishes, and 1/2 cup cilantro.
- Drizzle remaining dressing and mix when you serve, adding cracked black pepper, sliced avocado, and crushed red pepper flakes to taste.
To Make the Dressing:
In a small bowl, whisk together dressing ingredients until fully incorporated. Adjust seasonings according to your taste preference.

- 4 TBS Tahini
- 3 tsp Maple syrup
- 1 clove Garlic
- 1/2 tsp Cumin
- 1/4 tsp Salt
- 1/4 tsp Pepper
