Coconut Key Lime Pie

 

This dreamy, creamy summertime treat is low-carb, keto-friendly and is easy to make.

This pie saved the day at my mother’s birthday celebration last month, as she follows a keto diet to target her stage 4 breast cancer. But everyone needs pie (arguably more than cake!?) on their birthday, so this low-glycemic, healthy-fat-rich, creamy treat was just the thing.

You can also make this in a muffin tin as tarts or in a baking dish to cut into squares. 

Filling Ingredients

  • 2 cups coconut milk
  • 2 small (5.6 oz) cans of coconut cream
  • 1/4 tsp. sea salt
  • 1 Tbsp. grass-fed gelatin
  • 3/4 c of key lime juice, freshly squeezed (about 14 key limes)
  • 4 Tbsp Lakanto Monkfruit Granulated Sugar Substitute (or your favorite sweetener. Add more or less to taste.)
  • Pinch of spirulina or few drops of chlorophyll ***Optional – for color only

Crust Ingredients

  • 1 1/2 cup fine shredded coconut, unsweetened
  • 1/2 cup coconut flour 
  • 2 tbsp. chia seeds
  • 2 tbsp. hemp seeds
  • 4 Tbsp. melted coconut oil or grass fed butter

Coconut Whipped Cream

  • 1 small can coconut cream, refrigerated
  • 1 Tbsp of Monkfruit sweetener (or sweetener of choice)
  • Dash of sea salt

Step by Step Instructions

Step 1

In a medium bowl, mix shredded coconut, coconut flour, chia seeds, hemp seeds, and coconut oil.

Step 2

Spread and form mixture into a pie pan. Place in freezer for 15-30 minutes for the crust to firm.

Step 3

In a saucepan over medium heat, add coconut milk and coconut cream, bring to a boil and stir until lumps are gone.

Step 4

Once boiling, reduce heat to a simmer and sprinkle in gelatin. Continue to stir for about 10 minutes until thickened.

Step 5

Remove from heat and stir in monkfruit powder (or other sweetener) and sea salt

Step 6

Pour over coconut crust and refrigerate for 3 hours or overnight

Step 7

In a medium bowl, make the coconut whipped cream by adding coconut cream, monkfruit powder and sea salt together and whisk until whipped.

 

Step 8

Top the pie with the whipped cream and lime zest if you like, and enjoy!
